Ingredients needed:
2 TBS active dry yeast 2 cups water @ 110 degrees F 1 ½ cups water @ 110 degrees F ¼ cup honey or sugar 1 TBS salt 8-10 cups all purpose flour or bread flour(more protein)
This will produce an 'italian type' of bread
If you add 3 TBS of olive oil the bread will be more of a regular white 'sandwich type' bread
Directions:
Dissolve yeast in 2 cups water, mix well and let sit for 7 minutes During the 7 minutes, dissolve sugar in remaining 1 ½ cups water After the 7 minutes, mix the water/sugar solution with the yeast solution and add salt Mix well
Add 4 cups flour to the mixture and mix well
Add 2 cups flour and once again mix until dough no longer clings to bowl
Same thing with 2 more cups of flour
Knead with dough hook for 2 minutes on speed 2( if kneading by hand 10 minutes)
Dump dough onto lightly floured counter surface to finish kneading by hand. While kneading by hand, as the dough becomes sticky add a little more flour and continue kneading. Try to add as little flour as possible each time and continue this process until the dough no longer becomes sticky. Form into a ball and stick two fingers into the dough. If the indentations do not spring back the dough has been kneaded enough.
Once dough is ready form into ball, grease a bowl and the dough, cover and let rise
After dough doubles in size, punch down to get the air out, form loaves, put in greased pans and let rise again
Bake at 375-400 for about 20 minutes
For pizza dough, do not let dough rise. Form pizzas with the dough on your pizza pans, put on sauce and cheese and toppings and cook at 450 for 10-15 minutes |
